Jason was born in Cambridge, but did the bulk of his growing up on the South Side of Chicago. While studying English and East Asian Studies in Maine, he discovered a fondness for cooking as he tried to replicate his family’s home-style Chinese dishes. After college, he took a job in financial services that he hated every day. It was during this time that he turned all of his passion to cooking. On long weekends, he would cook five-and seven-course meals for his friends, armed only with knowledge pulled from books, the Internet, and the Food Network.
Jason then travelled extensively in Southeast Asia and China with the determination to learn firsthand about authentic Asian cuisine, while also discovering more about his Chinese heritage and his family’s culture. On returning from his travels, he started work at Chez Henri, followed by Rendezvous in Central Square, Island Creek Oyster Bar, American Seasons in Nantucket, East by Northeast, and Barbara Lynch’s Stir.
As an avid traveler and backpacker, Jason loves the multicultural aspects of food; how it can transport you to a different time and place when at home and how it can lead you around strange and new places when away. His travels in Europe, China and Southeast Asia helped foster a true love for the bold, intense flavors of the streets, whether tart, sweet, salty, spicy, or funky.
Jason proudly ferments his own kimchi and creates all the rubs, sauces, pickles, and dips found in each delectable dish at Night Market.
